Paleo Avocado Brownie Mug Muffin

A Paleo mug muffin! A great single-serving muffin you don't have to heat up your oven for.

Ingredients
  

  • 1/2 ripe avocado (pureed)
  • 1 egg yolk
  • 1 tablespoon olive oil
  • 1 tablespoon cocoa powder
  • 10-20 drops liquid stevia or 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons almond flour
  • Pinch baking soda
  • Pinch salt
  • Dark chocolate chips (optional)

Instructions
 

  • In a small bowl, mix together the avocado, egg yolk, olive oil, cocoa powder, stevia or maple syrup/honey, and vanilla.
  • Add the almond flour, baking soda, and salt.
  • Transfer to a ramekin or coffee cup.
  • Microwave on HIGH (100 percent power) for 90 seconds.
  • Top with chocolate chips if you like, cool a bit, and enjoy.
