Paleo Avocado Brownie Mug Muffin

A Paleo mug muffin! A great single-serving muffin you don't have to heat up your oven for.

- 1/2 ripe avocado (pureed)
- 1 egg yolk
- 1 tablespoon olive oil
- 1 tablespoon cocoa powder
- 10-20 drops liquid stevia or 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 3 tablespoons almond flour
- Pinch baking soda
- Pinch salt
- Dark chocolate chips (optional)
In a small bowl, mix together the avocado, egg yolk, olive oil, cocoa powder, stevia or maple syrup/honey, and vanilla.
Add the almond flour, baking soda, and salt.
Transfer to a ramekin or coffee cup.
Microwave on HIGH (100 percent power) for 90 seconds.
Top with chocolate chips if you like, cool a bit, and enjoy.
