This Keto Salmon Recipe Was So Good I Licked My Plate

This Keto salmon recipe is incredibly, like INCREDIBLY delicious and also Paleo, gluten-free, Whole30, and dairy-free.

Last week I did a vlog about this recipe (and the book it came from), but I was so blown away by how delicious this salmon was that it needed to have a place here.

Basically, I think eating a keto diet is definitely something worth exploring, even if it isn't a long-term thing for you.

It's not all that much different from eating regular Paleo – it's probably the version of Paleo that a lot of people think of – the low-carb version. So you've got to remove a lot of the baked goods, sweet potatoes, squashes, and fruits that might be a part of your diet. For me, it wasn't a viable long-term option just because I hated having to make different meals from my family or eat part of what they ate. Nothing worse than smelling a delicious baked good that you just baked that you can't eat…

But I also think I had amazing amounts of energy, mental clarity, and weight loss that I don't quite always get on Paleo.

So that's why I think it's worth trying out and seeing if it works for you.

Anyway – the reason I wrote this post is to share this amazing keto salmon recipe. I made it for the video above and even licked my plate at the end, which is quite rare for me and a fish dish.

That's how good it was.

Cashew Crusted Salmon with “Ponzu” Sauce Recipe

Cashew Crusted Salmon with “Ponzu” Sauce

Servings:
This Keto salmon recipe is incredibly, like INCREDIBLY delicious and also Paleo, gluten-free, Whole30, and dairy-free.
Prep Time 15 minutes
Cook Time 5 minutes

Ingredients
  

  • 1 cup Cashew Pieces
  • 1/2 cup fresh Cilantro (coarsely chopped)
  • 2 tbsp Coconut Oil (divided)
  • 1/4 tsp Sea Salt
  • 1 lb Salmon Fillets (with skin)
  • 3 tbsp Coconut Aminos
  • 1 lime (juiced)

Instructions
 

  • In a food processor, blend the cashews, cilantro, 1 tablespoon of coconut oil and salt, until even, green crumbles are formed.
  • In a medium nonstick skillet, heat the remaining 1 tablespoon of coconut oil over high heat, then place the salmon fillets in the pan, skin side down. Immediately spread the cashew crumbles on top the fillets, pressing them down onto the fish and creating a crust about ½ to ¾ inch thick. Cover immediately with a tight-fitting lid and lower the heat to medium. Cook until the salmon is turning opaque all over, about 5 minutes, then turn off the heat and let sit for another minute.
  • While the salmon is cooking, make the ponzu sauce by mixing the coconut aminos with the lime juice.
  • Serve hot with a couple of tablespoons of ponzu sauce on top of the salmon.

I’ve used this hack to keep my tortillas from freezing together 100’s of times. 

Usually by the time I get the tortillas home from Costco or the grocery store they’re thawed enough to do this, but if yours are still frozen together just let them sit on the counter for a few more minutes. Then layer with parchment or wax paper and freeze again! 

So handy for these, since almond flour and cassava flour tortillas aren’t cheap and I hate wasting some to breaking.

When I was in college I gained more than the Freshman 15 and spent the next two decades trying desperately to lose the excess weight. 

That took me to doing extreme endurance exercise like several Ironman triathlons, marathons, and more.

Those would help me lose most of it, but as soon as I stopped the weight would come back on. 

During this time my doctor diagnosed me with hypothyroidism and put me on Levothyroxine. 

I thought, “yay! THAT must have been my problem and the weight would come off.”

But it didn’t unless I exercised like crazy.

Eventually I couldn’t recover properly - I would be intensely tired and sore, get sick (like cold and flu-like symptoms) after exercise and feel like I was walking through a thick marshmallow.

And the weight came back.

When I told my doctor, he said, “nope your thyroid is fine, your labs are normal. Just exercise more.”

So I’d try, I’d beat myself up thinking I was just being weak and that if I could only exercise more, I’d be at my ideal weight. 

And my exhaustion would get worse. 

Little did I know I was suffering from autoimmune exercise intolerance- a situation quite common with those that have autoimmune disease. The short of it is that exercise is stress on the body and it was too much for my body to handle, making my symptoms flare up. (I have an entire video series about this on my YouTube channel if you want to learn the specifics)

By exercising more I was making my disease and bodily inflammation worse AND causing my body to hold onto the weight. 

It wasn’t until I changed the way I ate to get rid of the inflammation, balance my hormones, and stop the autoimmunity and started exercising in a way that worked best for me that the weight came off (almost like a “side effect” because I wasn’t trying at that point to do so)

If you’re like this and have been told just to exercise more to only feel worse and hold onto the weight, know you aren’t alone, and there is so much you can do that won’t drive you to burnout.

Sleep used to be one of my BIGGEST struggles. But now I typically get pretty decent sleep most nights.

It’s SO easy to get caught up in it all, even if you’ve managed to put your symptoms in to remission it may still be there, in your mind. But just remember- before any disease came your way, you were a person. With hopes, dreams, hobbies, passions, and more. That person is STILL there- just don’t let her go into the abyss. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Practice saying that you’re a person who just happens to have a disease instead of saying you are the disease. Make time for your hobbies. If you can’t do some of your old hobbies because symptoms are preventing it at the moment, find new ones. Connect with old friends. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Want an easy healthy weeknight meal?

Try this Sweet Potato Taco Meal 🍠🌮 (Paleo, Whole30, gluten-free, AIP Modifications)

Basic Recipe:
• Approx 1 small-medium Sweet Potato per person
• Avocado Oil (or fat of choice)
• Sea Salt
• 1/4-1/2 lb Ground Beef per person (or your ground meat of choice)
• 1-2 tbsp Taco Seasoning per lb (I love @primalpalate ‘s Taco seasoning)
• Toppings of choice - cherry tomatoes, cilantro, red onions, avocados, olives
• Sauce - dairy-free yogurt (or mayo) + juice of a lime + pinch of sea salt

Preheat the oven to 425 F. Cut the sweet potatoes into wedges, toss with avocado oil and sea salt and then place on a parchment-lined sheet pan. Bake for 35 minutes. Meanwhile, prepare desired toppings and mix up the sauce. Brown the ground beef, add the taco seasoning and a few tablespoons of water and simmer until the sweet potatoes are done.

Assemble by putting several sweet potato wedges on a plate, then adding a portion of ground beef, and then adding your toppings and sauce.

(To make AIP-friendly: Omit the tomatoes, use an AIP-friendly taco seasoning, and either use a compliant yogurt or use plain coconut milk or tigernut milk for the sauce)
