With simple prep and simple cleanup, an amazing burst of flavor awaits you with this Greek Sheet Pan Supper. Easy for any weeknight dinner, it's a full meal that's Paleo, AIP, and Whole30 compliant.

Who doesn't love a good sheet pan meal? You get a main dish and one or two sides all in one pan. They are super versatile, too! Just change up your protein or sides to what you have. Even change up the seasoning for a whole new meal.

And, clean up is a cinch. Put the sheet pan in the dishwasher with all the other dishes and you're done. Even your kids could do it. *wink*

The part I love the most is how easy they are to double and turn into a freezer meal for later. Put half in a freezer safe container, label and store in the freezer for up to 3 months. This gives future you a break from prepping dinner from scratch when you are too exhausted to even think about dinner.

So go ahead! Double or triple this recipe and create multiple meals for those crazy days. You deserve a break. 😀

Ingredients in this quick and easy dinner (and substitutions)

  • Chicken tenders: these cook up quickly and evenly, making this a great protein for a sheet pan dinner. Cod makes a great seafood substitution for this meal. Leave the filets whole so they cook approximately the same time as the rest of the ingredients. You can cook it on a separate sheet pan so it's easier to remove it if it’s done after 15 minutes. 
  • Zucchini: this nutrient dense and fiber rich super star cooks up with very little fuss. Feel free to swap out for summer squash, butternut squash, or any squash you have on hand.
  • Red onion: this allium packs quercetin, which fights inflammation and boosts the immune system. Substitute with sweet onions or shallots.
  • Sweet potato: this beautiful starch helps add some bulk to this sheet pan dinner. If you are out of sweet potatoes, substitute with more zucchini or, if you're feeling adventurous, plantains.
  • Lemon: bursting with vitamin C, this lovely garnish helps boost iron absorption, which is super helpful for some of us with an autoimmune disease. You can try substituting with limes or some white wine vinegar. It will change the flavor profile slightly, but still be delicious.
  • AIP greek seasoning mix: I have a great homemade recipe for this seasoning. In a pinch, you can sprinkle everything with dried oregano. If you want to buy a pre-made seasoning, be sure it is AIP-compliant.

How to make this delicious sheet pan dinner

  • Preheat the oven to 425 F.
  • Cut the chicken tenders into large pieces.
  • Dice the zucchini.
  • Finely dice the sweet potato.
  • Slice the lemon into wedges.
  • Chop the red onion.
  • Add parchment paper to a sheet pan.
  • Place the chicken pieces on one end of the sheet pan. Next add the zucchini, red onion, and sweet potatoes.
  • Sprinkle 1.5 tablespoons of the seasoning mix over the meat and veggies. Drizzle everything with 2 tablespoons of olive oil.
  • Place in the oven for 20 minutes (or until the chicken is done).
  • Optional: chop, slice, and dice double of all of the ingredients and just put half into a freezer-safe container or bag and freeze for later!

Making this simple supper ahead of time

This is a great dinner to make ahead. Place all the ingredients in an airtight container and store in the fridge for up to 5 days. When it's dinner time, pour everything onto a sheet pan and bake in the oven for 20 minutes, or until the chicken is done.

I'm a HUGE fan of easy freezer meals, especially ones where you don't even need to cook the ingredients first.

This meal makes a perfect “dump-and-go” freezer meal. So my suggestion is to prep 2x the ingredients, pour the other half into a freezer bag, and freeze for up to 3 months. When you need an easy meal, thaw in the fridge the night before or do a quick thaw on the counter top for a couple of hours. (It's ok if things are still a little frozen before baking) Then pour everything onto a parchment lined sheet pan and bake until the chicken is done.

Notes

I love it served with a dollop of coconut milk yogurt and some kalamata olives.
If you prefer seafood, cod would also be a great choice with this, but leave the filets whole so they cook approximately the same time as the rest of the ingredients, and perhaps cook it on a separate sheet pan so you can remove it if it’s done after about 15 minutes.
